I adapted this recipe from Giada de Laurentis, one of the chefs I idolize, but swapped some of the herbs and cheeses for what I personally prefer. The earthy mushrooms contrasting the bright colours of the herbs make for a gorgeous side dish or appetizer.

Stuffed Mushrooms

Ingredients
- 12 cremini mushrooms, cleaned and stems removed
- 1/2 cup bread crumbs
- 1/4 cup parmesan cheese, grated
- 2 tablespoons basil leaves, minced
- 1 tablespoon parsley
- 2 cloves of garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup olive oil plus extra for drizzling
Instructions
- Preheat an oven to 400 F.
- In a bowl combine the all of the ingredients except for the mushrooms. Spoon the mixture into the mushrooms.
- Drizzle a baking sheet with olive oil and place the stuffed caps on it and bake for 30 minutes until slightly golden on top and the mushrooms are cooked through. Serve and enjoy!
Notes
- Feel free to swap the herbs in the recipes for any others you would prefer. Mushrooms also taste great with thyme, rosemary or mint.
