This may appear like a sophisticated appetizer that is too intimidating to make at home. However, it is not super difficult to pull off. Make sure you are getting good quality, super fresh scallops. Cook until golden brown and you will have a perfect dish!

Prosciutto Wrapped Scallops

Ingredients
- 10 scallops, cleaned
- 10 slices prosciutto
- 1 lemon, squeezed
Herb butter
- 1 stick of butter, softened
- 2 cloves of garlic, minced
- 1/4 cup fresh parsley, minced
- 2 tablespoons fresh thyme leaves, minced
- 2 tablespoons fresh rosemary leaves, minced
- 1 tablespoon fresh oregano, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Pat the scallops dry. Wrap each scallop with a piece of prosciutto. Make sure the top is exposed. Season both sides with salt and pepper.
- Place two tablespoons of butter onto a sauce pan over medium high heat. When the butter has melted add 4 or 5 scallops. Sear on both sides 2-4 minutes until golden brown. Repeat the process for the remaining scallops adding more butter if necessary.
- Serve immediately!
Notes
- The herb butter for this can be used for tons of other dishes such as garlic bread, roast chicken, pastas, and many more and lasts for a week or two in the fridge.
