This is a delicious side to serve with dinner, or a nutritious lunch (if there is any left over). The earthy flavour of the mushrooms mixed with garlic make for a comforting and delicious dish.

Mushroom Quinoa

Ingredients
- 1 cup quinoa
- 2 cups chicken broth
- 1 cup cremini mushrooms, thinly sliced
- 2 cloves of garlic, minced
- 2 teaspoons olive oil
- 1/2 teaspoon sherry vinegar
- 2 tablespoons parsley, minced
- Salt and pepper to taste
Instructions
- Cook the quinoa according to the directions on the package but instead of using water use chicken broth.
- In a large saute pan, heat the olive oil over medium high heat. Add the garlic and saute until fragrant, for 30 seconds. Add the mushrooms and saute until golden on both sides and they are cooked through. Season with 1/2 teaspoon salt and 1/8 teaspoon pepper. Add the sherry vinegar and parsley leaves and stir to combine for a minute or two.
- In a large bowl, combine the mushroom mixture and quinoa. Season with salt and pepper to taste.
Notes
- If you do not have chicken broth available, you can make the quinoa with salted water.
