A fragrant and delicious main course: good for dinner and leftovers.

Herb and Lemon Roast Chicken

Ingredients
- 1 3-4 lb. roasting chicken (a 'natural' bird is best!)
- 3-4 tablespoons butter softened
- 1 teaspoon kosher salt
- few grinds fresh pepper
- 3 tablespoons mixed chopped fresh herbs ( rosemary, oregano, thyme and sage) or 1 tablespoon dried
- 2 teaspoons minced fresh garlic
- 1 lemon
- few sprigs parsley
Instructions
- Rinse chicken inside and out and pat dry with paper towel.
- Combine softened butter, minced garlic, herbs,salt and pepper.
- Massage butter mixture on to chicken and carefully separate the skin of the breast from the meat and insert some butter there as well.
- Cut lemon in half and squeeze juice over buttered bird.
- Put used lemon halves and parsley inside the cavity.
- Place chicken in a foil lined pan and roast in an oven that has been preheated to 350 F.
- Roast for approximately an hour and a half or until juices run clear.
- Rest for few minutes before carving and serving.
Notes
- The butter gives the chicken a delectable crispy skin.
