Ingredients
- 1 baguette, cut into 1/2 inch slices
- 4 roma tomatoes, diced
- 1 bunch basil, washed and dried well
- 1/2 stick butter, softened
- 4 cloves of garlic, minced
- 1 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat an oven to 400 F.
- Combine the butter and half a teaspoon of salt, 1/4 teaspoon pepper, and the garlic in a bowl. Spread onto the baguette slices and place on a sheet pan. Bake for 5-10 minutes until the baguette is toasted and golden.
- Layer the basil leaves and roll them into a cigar. Slice across to create confetti-like pieces.
- To make the bruschetta mixture, combine the basil leaves, tomatoes, and the olive oil in a bowl. Season with salt and pepper to taste.
- Spoon the mixture onto the toasts or serve on the side. Enjoy!
Notes
- I give bruschetta an extra kick by serving it with pesto. Check out the recipe here: http://www.thegarlicpad.com/the-garlic-pad-sandwich/
