Ingredients
- 1 baguette, sliced in 1/2 inch thick diagonals
- 2 avocados, diced
- 1/2 cup cherry tomatoes, quartered
- 1 lemon, juiced
- 8-10 basil leaves, thinly sliced
- 4 tablespoons olive oil
- 1 large clove of garlic
- 1 teaspoon salt
- Few grinds fresh pepper
- 1/4 cup bacon bits, cooked
Instructions
- Preheat your grill to high heat.
- In a large bowl, combine avocado, tomatoes, lemon juice, basil, salt and pepper, and 1 tablespoon olive oil. Using a fork, mix to combine, ensuring the spread is as smooth as possible.
- Using a brush, coat the baguette slices with the remaining olive oil.
- Toast the baguette slices on the grill for 5 minutes, olive oil coated side down. While the bread is still hot, rub the garlic into each slice to give it that delicious essence.
- Spread the avocado on the toast and sprinkle with bacon. Serve and enjoy!
Notes
- If you need this appetizer for a healthier crowd, swap the bacon for turkey bacon, and opt for a multigrain baguette.
