This is my go to summer dinner when I am entertaining. People assume the cedar plank method is fancy, but I find it the easiest way to cook fish without having to worry about flipping it on the grill. The salsa is also bright and colourful which gives the dish a festive presentation.

Asian Cedar Plank Salmon with Mango Salsa

For the salmon
- 1 cedar plank
- 1 side of salmon, trimmed to fit a cedar plank
- 2 cloves of garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon dijon
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 1 tablespoon sesame seeds
For the salsa
- 1 large ripe mango, cut into a small dice
- 1 red pepper, cut into a small dice
- 2 green onions, finely sliced
- 1/4 cup cilantro, minced
- 1 teaspoon ginger, grated
- 1 clove garlic, minced
- 2 teaspoons soy sauce
- 2 teaspoons sesame oil
- 2 teaspoons olive oil
Instructions
- Soak the cedar plank for 2 hours.
- Heat one side of the barbecue, leaving the other side untouched. Leave to preheat for 15 minutes.
- For the marinade, combine all of the ingredients except the salmon and sesame seeds in a small bowl. Place the salmon on the plank. Brush the marinade over the salmon, coating it evenly. Sprinkle the sesame seeds all over the salmon.
- Carefully place the salmon on the side of the barbecue where the heat is turned off. This will cook the salmon through indirect heat, ensuring the plank does not burn, but will still caramelize. Leave the salmon to cook for 15-20 minutes, rotating halfway through, so it cooks evenly.
- Meanwhile, combine all of the ingredients for the salsa in a bowl. Season with salt and pepper to taste.
- Remove the salmon from the barbecue when a thermometer stuck into the thickest part registers to at least 140 F, or until the salmon looks golden and delicious.
- Serve with the salsa and enjoy.
Notes
- Make sure to soak the cedar plank for 2 hours to ensure it does not burn!
